Jean Georges does steak. The institution of such well- loved New York spots as Vong, Jean- Georges, 66; Jean- Georges Vongerichten is not known for steak but that hasn't prevented him from conquering another frontier. Skip the stupid buffets you find in Vegas and come right here. Creative sides (instead of the usual boring mashed potatoes) using everything from dumplings to goat cheese dot this unusual steakhouse menu. We loved the various kinds of sauces and mustards. Squishy brown velvet dining chairs and a mirrored dining room make for a not- too- over- the- top approach to a Vegas dining experience. We feel it's formal so dress formal and as with other high end spots in this town, dinner only.
