It's not actually all about the goat at chef and owner Stephanie Izard's famous spot. For those into foodie and adventure eating, this spot shook up Chicago with her lamb tartare in an English pea tapenade and her skewered lamb heart done with sweetbread crisp, ramps and strawberry. But sometimes here, it's less the actual ingredient, and more the mixing as with dishes such as a hiramasa crudo done with crisp pork belly in an aji chili and caperberries or her seared tuna with lamb sausage with grilled blueberries. But lest the vegetarians be scared off, the constantly rotating menu also features a ton of great veggie options such as pan-fried shishito peppers in parmesan, sesame and miso; a kohlrabi salad done with fennel, evalon, toasted almonds and (once again) blueberries; or a roasted cauliflower and pickled peppers with a bit of pine nuts and mint. All this has taken Izard well out of Chicago to various food events where her chef skills are on display. A Saveur favourite, she can be found guesting at their events.
